Will Lacey has been waiting a long time for this week.

That's because this is the week the Yellow Dog Barbecue owner's Savvy Foods cooking sauces have hit the market and are for sale locally in Columbia.

"It's been an amazing day for our first day of selling," Lacey told The State Tuesday evening. "We actually quadrupled our first month's projections on the first day."

Lacey had intended to roll out the sauces last fall but the area's flooding delayed his plans. That turned out to be a blessing in disguise since he took that extra time to re-brand and rework his marketing strategy and also received endorsement from former University of South Carolina running back Marcus Lattimore.

Savvy's first two sauces to roll out are a Tomato Dijon Fusion (known to locals as the Yellow Dog "Savvy Sauce") and Mole-Inspired sauce (known as the Yellow Dog "Dixie Blend") that is made with locally brewed Loveland Coffee's cold-brew coffee concentrate, a dark cocoa powder and a blend of chili powders.

"Our molé sauce can (be) used in a craft buttermilk ice cream at South Carolina's leading creamery--Sweet Cream Co. on Main Street. Our Tomato Dijon fusion is now perfect for a drizzle over a French omelet or an incredible gravy for shrimp and grits with just a splash of heavy cream," said Lacey, who also manages the kitchen at Jake's on Devine. "These products are the next generation and have been developed for consumers to get every possible ounce out of them with their versatility."

In just four weeks, Lacey plans to roll out his Bourbon Honey Mustard sauce and, four weeks later, a Stout BBQ sauce made with locally brewed Conquest Medusa Stout beer.

The sauces retail for about $7 for a 12.5 oz. bottle and can be purchased locally at the retailers listed below:
