New Lexington restaurant sets opening date

There may be a number of build-your-own pizza restaurants popping up, but there is one major factor that makes Firenza Pizza special, according to local franchise owner Bruce Rickman.

“Our crust is what sets us apart,” Rickman said. “Crust is the foundation for every pizza. Our crust is made with Double 00 flour from Italy and the dough is made every day in the store. We never make a pizza from a frozen crust, and we always form the dough by hand, unlike some other places that shape it by pressing it, which takes the air out of it.”

Rickman and his wife, Eileen, are planning to introduce the Fairfax, VA-based Firenza to Lexington on January 9 in the Lowes Foods-anchored Lexington Square shopping center at 5226 Sunset Blvd.

In addition to build-your-own pizzas, Firenza will offer salads as well as draft beer and wine.

“The wine will come in kegs like the beer, so it’s much better for the environment than going through a lot of wine bottles. Plus, the last glass of wine will taste just as good as the first,” Rickman said.

Firenza opened its first location in the Midlands earlier this month at 1270 Bower Pkwy. off Harbison Boulevard.
