Greenville-based Bacon Bros. Public House is looking to open a franchise location in Columbia. The restaurant —specializing in house-cured meats and fresh, local ingredients — is undergoing an expansion wave and has recognized Columbia’s growing food scene as an opportunity for growth.
“Known more for college football and state politics, Columbia is in the midst of a breakout when it comes to good eats. New, innovative restaurants are popping up all over, transforming the local dining scene into one of the most dynamic in the region,” said Mike Porter of Bacon Bros. in a press release. “This is a city that savors the fresh and the new, and we anxiously look forward to becoming a part of the amazing restaurant scene.”
The menu at Bacon Bros. features barbecue sandwiches and burgers, salads, a snack menu with crispy pork tail, rabbit tacos and smoked catfish dip, and a meat board with cured meats served by the ounce. Each restaurant will have a cure room near the dining room where guests can see the meats hanging from the ceiling.
Bacon Bros. has opened in Houston and Porter says “We have a great restaurant, a great brand, and a great concept that is doing well. We’re confident it has legs and we can recreate this in other places like Columbia.”
