Shop Around: Eggs Up opens in Lexington today; second Columbia location in the works
Lexington residents were able to start their morning at the new Eggs Up Grill that opened there today at 205 Columbia Ave. behind Rush’s.
Eggs Up was founded on Pawley’s Island in 1986 by Chris and Pat Skodras. The restaurant quickly developed a loyal following which led to the development of 13 additional locations throughout South Carolina and into Georgia. Co-owner John Aun is operating partner for the Lexington location which is also owned by Drew Hampton and multiple other partners. Hampton and the other partners opened Columbia area’s first Eggs Up on Devine Street in 2014.
A second Columbia location under a different franchisee is in the works, according to Eggs Up’s website, as are three additional locations in South and North Carolina. Details for those locations are yet to be released.
Eggs Up is known for breakfast favorites such as corned beef hash and eggs, eggs Benedict, omelets, pancakes, waffles and French toast as well as lunch items including burgers, soups and sandwiches such as the highly requested Reuben.
Eggs Up Lexington will be open daily for breakfast and lunch from 6 a.m. to 2 p.m.
