Sometimes you are in the mood for ice cream. Other times, you might be in the mood for a taco.

But if you are craving both, there is a new spot coming to Lexington that is likely to fit the bill.

Business owner Sonia Norman is opening Ice Cream Taco restaurant at 4884 Sunset Blvd. in Lexington. That’s about 2 miles west of Interstate 20 and less than half a mile east of Lexington’s Target store. The shop has already had a soft opening event and plans to do a couple more. Norman said a formal opening is expected in coming weeks.

Norman, a former Columbia firefighter, admits she had an inspiration in opening a restaurant that is a mash-up of ice cream and tacos. She was a big fan of Sandy’s, the now-closed group of restaurants that were once ubiquitous in the Columbia area. Sandy’s famously served hot dogs and ice cream.

“Sandy’s was known for hot dogs and ice cream,” Norman said. “So this is almost an imitation of that, but with tacos. People love tacos. Tacos make people happy. Tacos make me happy. And ice cream makes me really, really happy.”

The shop will have chicken, beef, seafood and veggie tacos. It also will sell chili dogs.

While she wouldn’t divulge her recipes, Norman said the tacos and chili dogs will have plenty of flavor.

“Originally, I’m from upstate New York, and we do things a little different,” Norman said. “My tacos are not your typical Taco Bell tacos or anything like that. My taste is very signature and unique.”

Ice Cream Taco also will carry dozens of flavors of Hershey’s ice cream, offered up in all of the requisite forms. There will be ice cream cups and cones, milkshakes, banana splits and a handful of signature sundaes, including triple brownie deluxe, strawberry cheesecake and peaches n’ cream, among others.

Norman said she’ll work to keep prices reasonable.

“I’m not trying to get rich,” she said. “I want to be a blessing to others.”
