Columbia’s popular Vista getting a new restaurant. The grand opening date is set
A new restaurant for smoothies, sandwiches, salads and more has set a grand opening date in one of Columbia’s most popular hospitality districts.
Rabbit Food Salad & Smoothie Bar, located at 701 Gervais St. suite 140, will have a “grand opening celebration” beginning at 11 a.m. March 30, according to posts from the business on social media.
“Enjoy fresh flavors, great vibes, and a hopping good time!,” Rabbit Food said on Facebook. “Whether you’re looking for a place to eat, meet, or study, we’ve got the perfect atmosphere waiting for you.”
The new salad and smoothie spot will be in a strip of Gervais Street businesses in the Vista Lofts building that also includes a PNC Bank branch, Gervais Nail & Spa and a UPS store, among others.
Rabbit Food has touted on social media that it has a salad bar with “crisp vegetables and quality ingredients” that are prepared fresh daily.
“Build your salad exactly the way you like it — fresh, healthy, and made just for you,” the restaurant said in a Facebook post.
An online menu for Rabbit Food shows a host of options. For instance, they have a number of bagel sandwiches, including a turkey and Swiss bagel that comes with turkey, Swiss cheese, lettuce, tomato and mayo on a toasted everything bagel. The restaurant has croissants, including a chicken salad croissant, and a roster of sandwiches that includes a chicken caprese on ciabatta bread.
The restaurant also will have well more than a dozen smoothies, per the online menu. That includes the strawberry cheesecake smoothie that comes with strawberries, vanilla, cream cheese and almond milk and is drizzled with strawberry syrup, low-fat yogurt and graham crackers.
Gervais Street through the Vista is a high-traffic corridor near the Congaree River. About 21,400 cars per day travel down that stretch of Gervais, per state Department of Transportation statistics.
