A buzzy new restaurant has opened in Lexington. Check out what’s on the menu

A new spot for oysters, pizza, pasta and more has made its debut in a busy area of Lexington.

Mother’s Oysters + Pies, which is located at 109 Old Chapin Road in the Shoppes at Flight Deck plaza, officially opened its doors March 17.

“Spring has arrived,” Mother’s posted on social media on March 23 after its first week of business. “So did you. Thank you Lexington for a beautiful first week.”

Mother’s Oysters + Pies is an effort from restaurateur and developer Jonathan Stambolitis, who is the co-founder of Purty Projects. Mother’s is meant to complement Purty’s Sandpiper Square project, which is bringing 31 new homes to property just off Old Chapin Road and Snelgrove Road, behind the Shoppes at Flight Deck.

As noted in a 2025 story in The State when Mother’s was first announced, the restaurant is “designed to channel the lively spirit of a Mediterranean coastal town” and “blend the energy of a neighborhood favorite with the culinary craftsmanship found in fine dining.”

The menu at Mother’s, as shared on the restaurant’s Facebook stories in recent days, features a mix of seafood favorites, wood-fired sourdough pizzas, pasta and more.

The restaurant has a raw bar menu with freshly shucked, East Coast oysters and peel-and-eat shrimp. Offerings on the starters menu include tuna tartar, lobster rolls and chargrilled oysters, among other items.

There are a host of selections on the pasta menu, including a Split Creek Farms goat cheese ravioli with walnut romesco, brown butter and Parmigiano-Reggiano.

And then there is the sourdough pizza menu, which features a number of pies. Among them is the Bianca, which has a garlic cream base, fresh mozzarella, sweet onions, Asiago, Parmigiano-Reggiano, compound butter and chives on a garlic butter crust.

The new Lexington restaurant also offers a deep roster of wine by the glass, draft beer, bottles and cans of beer, cocktails and more.

Mother’s Oysters + Pies, according to its Google listing, is open from 5 to 9 p.m. Tuesday through Thursday and 5 to 10 p.m. Friday and Saturday.
